Ingredients: (serves 4)
4 shots of espresso
1 tea spoon vanilla essence
2 cups cold water
2 tablespoons white sugar
1 Litre vanilla ice cream
Method:
Mix espresso and sugar, stir until dissolved. Add water, vanilla essence and 8 scoops of ice cream in a blender. Blend until smooth and frothy. Pour into a serving cup and add a scoop of ice cream.
